Melanie's Pancakes

Ingredients
2 cups flour
2 tsp baking powder
¼ tsp salt
1 tbsp sugar
2 tbsp flaxseed meal
6 tbsp water
1 ½-2 cups non-dairy milk
2 tbsp melted and cooled vegan butter
Instructions
Mix the flaxseed with 6 tablespoons of water and let it sit for at least 15 minutes until it turns into an eggy substance.
In a bowl, combine the dry ingredients (flour, baking powder, salt, and sugar).
Whisk in the milk, butter, and flaxseed egg, only a little bit at a time until the mixture turns into a batter.
Heat a pan or griddle to medium heat and spoon the batter into 2-to-3-inch-diameter circles.
Remember that color does not indicate how cooked the pancake is, so cook the pancake for approximately 3 minutes on each side.
Serve with some of your favorite pancake toppings and enjoy!
