Melanie's Pancakes

Ingredients

  • 2 cups flour

  • 2 tsp baking powder

  • ¼ tsp salt

  • 1 tbsp sugar

  • 2 tbsp flaxseed meal

  • 6 tbsp water

  • 1 ½-2 cups non-dairy milk

  • 2 tbsp melted and cooled vegan butter

Instructions

  1. Mix the flaxseed with 6 tablespoons of water and let it sit for at least 15 minutes until it turns into an eggy substance.

  2. In a bowl, combine the dry ingredients (flour, baking powder, salt, and sugar).

  3. Whisk in the milk, butter, and flaxseed egg, only a little bit at a time until the mixture turns into a batter.

  4. Heat a pan or griddle to medium heat and spoon the batter into 2-to-3-inch-diameter circles.

  5. Remember that color does not indicate how cooked the pancake is, so cook the pancake for approximately 3 minutes on each side.

  6. Serve with some of your favorite pancake toppings and enjoy!
