Ingredients

  • Dough:

  • 2 cups vital wheat gluten flour

  • 1 package active rapid rise yeast

  • 1 tsp garlic powder

  • 1 tsp ground ginger

  • 1 ¼ cups water/vegetable broth

  • 3 tbsp soy sauce

  • 2 tsp sesame oil

  • Broth:

  • 4 cups water

  • ¼ cup soy sauce

  • 4 slices of ginger/3 tbsp ground ginger

Instructions

  1. Combine 2 cups vital wheat gluten flour, 1 package active rapid rise yeast, 1 tsp garlic powder, 1 tsp ground ginger and mix thoroughly. Combine 1 ¼ cups water/vegetable broth, 3 tbsp soy sauce, 2 tsp sesame oil and add to the dry mixture; mix with a fork until the dough reaches a kneadable consistency.

  2. Knead a couple dozen times, then cover the bowl and let the dough rise for 30 minutes.

  3. While waiting, prepare broth. Add 4 cups water, ¼ cup soy sauce, 4 slices of ginger/3 tbsp ground ginger to a large pot with a lid. Bring broth to a boil. Wet hands and a knife; cut gluten into 6-8 pieces and pull into thin strips. Add gluten dough pieces to broth, reduce to a simmer and cover for 1-2 minutes. Remove from heat, and cool in broth.
